Chicken
Kiev is a classic traditional Russian chicken (or
Ukrainian) dish.

Cut
the chicken in half, then cut whole fillets from each
half with the wing joint attached, also cutting the
tendon between the small and large parts of each half,
leaving you with two large peices of chicken with wing
bones and two smaller pieces.
Put
the chicken pieces between two sheets of grease proof/wax
paper and pund until they are flat.Mix the crushed garlic
with the butter and place on each piece of chicken.
Pull the edges together and roll the meat in to pear
shapes.

the bread crumbs and eggs in seperate bowls.
season
the chicken with salt and pepper, cover in flour and
then dip in to the eggs and then the bread crumbs in
turn.
Saute
and brown the chicken peices all over in hot oil for
about 4 minutes. Place in the oven (400F) and roast
for a further 7-10 minutes.
Serve
with seasons vegatable and potatos of your choice.
