Stroganoff
Beef
is still the most commonly eaten and popular meat
in Russia. Beef Stroganoff is named after Count Stroganoff,
the mayor of Odessa who became famous for offering
free food to any one who came to his door, providing
they were resonably dressed of course.

Stroganoff was created by his chefs as it was a recipe
that could easily be prepared before hand and then
served in individual helpings.

Slice
the beef fillets in to thin strips (~1.5-2cm thick)
against the grain of the meat and tenderise with tenderizing
hammer. Slice the strips in to short lengths of 4-6cm
and season lightly with salt and pepper.
Chop
the onion in to thinly sliced rings and then saute them
in butter. When the onion slices turn transparent add
the meat and saute on a high heat until brown, this
should not take long. It is best to use a large pan
so that the meat can all be cooked evenly at the same
time.
Remove
the beef and onions and keep warm in a covered dish.
Add the tomato paste to the juice left in the pan and
mix well before adding the sour cream and meat broth
and again stirring well.
Then
add the beef and onions back to the pan and mix well.
Allow to simmer for 5-10minutes, stirring occasionally.
Season
to taste with Salt & Pepper and serve with potatos
of your choice.
